Christmas Prawn Cocktail- Asian inspired

Prawn Cocktail is my absolute favourite Christmas dinner starter. I know it’s also an old favorite of many. This year, however I plan to give my Prawn Cocktail an Asain twist with this recipe from Shelina Permalloo, former Masterchef UK winner.

80g Chinese cabbage, finely shredded
80g green beans, top and tailed
80g cherry tomatoes, quartered
200g smoked salmon cut into 4 pieces
12 cooked tiger prawns
50g crushed cashew nuts
A large handful of Thai basil, torn
A large handful of coriander, chopped (retain a few whole leaves for the garnish)
2 tbsp mayonnaise
1 tsp fish sauce
Juice of 1 lime
Pinch of hot chilli powder
1 tbsp sweet chilli sauce

1.To make the dressing, place all the ingredients into a small bowl and mix until thoroughly combined.
2.In a large bowl, mix together the cabbage, beans and tomatoes and then add two- thirds of the dressing and mix thoroughly. Divide this into 4 serving glasses
3.Carefully mix the remaining dressing into the cooked prawns and top each glass with three prawns. Roll a piece of smoked salmon on top and serve with some coriander leaves and cashew nuts to garnish.

*My son’s allergic to cashews and pistachios (they’re from the same family) so I’ll omit the cashews and perhaps try walnuts instead ☺️.
